Lemon Turmeric Chicken Soup


Anyone else big soup fans?! I love a warm bowl of nutritious soup in the winter, and the lemon and turmeric in this soup, is perfect for a little immunity boost. Bright, light, lemony, and full of different textures and yummy veggies, with a touch of Mediterranean spices and flavor. And...comes together quickly, bursting with flavor...plus perfect for meal prep!


Lemon Turmeric Chicken Soup


  1. Prepare your chicken and broth. I used skin off chicken legs, to develop extra flavor in the broth, but you could certainly use chicken breast, or even left over rotisserie chicken. If using left over, shredded chicken, I would still recommend pressure cooking all the broth ingredients, except the chicken to develop the flavors quickly.



    In an InstaPot, add the following:

    • Chicken legs ( 4-6 legs), skin removed .

    • 6 cups chicken stock

    • 2 tablespoons turmeric

    • 1 tablespoon za'atar

    • 1 tablespoon lemon pepper

    • Salt to taste

    • 2 sliced lemons

    • 3 cloves of peeled garlic

    • Drizzle of olive oil

  2. Pressure cook the chicken legs and broth for about 30 minutes on high in the InstaPot.


  3. While the chicken is pressure cooking, prepare and cut your vegetables. You could use almost anything, but I used the following:

    • Yellow Squash

    • Kale

    • Celery and celery leaves

    • 1 onion

    • sliced carrots



  4. Once the chicken is cooked- the meat will literally fall off the bone. Remove the chicken legs and shred the meat off the bones- and discard the bones.

  5. Using a strainer, remove the lemon slices and garlic cloves from the broth, and set the broth aside in a large bowl.



  6. Next set the InstaPot to sauté, add the vegetables and some olive oil. Season with salt, lemon pepper, turmeric and za'atar. Add 2 cloves chopped garlic. Sauté.

  7. Once the vegetables start to soften, zest one half of a lemon over the vegetables, and stir.

  8. Continue to sauté and add one can of drained white beans.

  9. Add back the broth & chicken, stir, and reheat on the slow cook setting if needed. Otherwise, you are ready to serve! Enjoy with a salad, naan, bread- or on it's own!
